Tasting Note:January 11, 2018

Medium to deep ruby red. A bit mute on the nose with dark cocoa, tons of graphite, and black currants. A little dusty too. Medium plus tannins (6.5/10) and a dry medium plus body. Bitter cocoa on the attack with black raspberries, cassis, and pencil shavings. Medium plus to long finish. Give a nice decant before drinking. Needs time, day two and day three it became more integrated.

Parabellum is the second label for Force Majeure Vineyards out of Red Mountain in Washington State. All the fruit in this bottling is 100% from the estate vineyard. Made up of 42% Merlot, 35% Cabernet Sauvignon and 23% Cabernet Franc. Only 250 cases produced.
